Date Scones

A sweet treat you can enjoy with a cup of tea.

date scones

Makes 10

3 cups self-raising flour

1 tsp baking soda

50g margarine, cold & chopped

1.5 cups buttermilk

1 cup chopped dates

  1. Preheat oven to 180ºC. In a bowl, sift flour and baking soda and add chopped margarine. Using your hands, work the margarine into the flour ensuring that it does not melt. Flour should resemble breadcrumbs.
  2. Add the buttermilk and dates. Using a knife, mix buttermilk into the flour. Keep the mixture fairly wet. On a floured surface, turn out dough. Pat down gently to approximately 2.5 centimetres thick – do not knead or overwork. Using a 6cm cookie cutter, cut dough into rounds and place on a baking paper-lined tray. Alternatively, for a more rustic scone, using a knife and chop dough into portions.
  3. Bake for 10-15 minutes or until scones are golden on the outside.
